Mocha Cookies

  • 2 Cups Flour
  • Cup Sugar
  • Cup Cocoa Powder
  • Cup Hot Water
  • Tsp Salt
  • 1 Tblsp Instant Coffee
  • 4 Tsp Vanilla
  • 1 Cup Butter (Room Temp.)

    1. Sift together Flour, Sugar, Cocoa Powder, and Salt
    2. Combine hot water, coffee and vanilla and set aside
    3. cream butter until smooth and stir in half of dry mixture and mix
    4. Stir in coffee and then add the rest of the dry and combine until gently blended
    5. Divide into 2 logs wrap in wax paper and chill for 20 min.
    6. Cut into " thick slices
    7. Bake at 325F for 15-18 min.


    Date Turnovers

  • 1 Cups Shortening
  • 1 Cup Brown Sugar
  • 1 Cups Flour
  • 2 Cups Oatmeal
  • Tsp Salt
  • 1 Tsp Baking Soda
  • Cup Water

    1. Cream shortening and brown sugar
    2. Add flour and oatmeal and mix
    3. Add salt and baking soda to boiling water (hold over dry mixture as this will fizz)
    4. Roll out on floured board to a thickness of " and cut into 3 to 4 inch rounds
    5. Fill with approximately 2 Tblsp of date filling, fold in half and pinch edges together to seal
    6. Place on baking sheet and cook at 350f for 20-25 min or until golden brown
